Warm and spicy brown rice and tuna salad |

Spicy and tangy tuna salad with brown rice for a filling lunch. Serve as side dish, or as a main entree.
Ingredients
1 Cup Brown Rice
1- 5 oz. can of tuna with olive oil (Bumble Bee)
1-2 green onion, sliced
1 jalapeno, chopped
Dill weed
salt and pepper
Cayenne pepper
juice of 1/2 large lemon
1 TBS. Olive oil
Directions
Cook rice and while it's still hot, add the tuna with oil, additional oil, dill weed, and juice of lemon. Add all the remaining ingredients except cayenne and stir. Add the cayenne as an added decoration. Best served warm.
